Andrew is Executive Head Chef of the fine dining Restaurant at Drakes Hotel, one of Brighton's finest hotels. Since settling in Brighton with his family in 2001, Andrew has worked in some of the town’s most prestigious restaurants including Sevendials and has received critical plaudits in The Good Food Guide 2008. Prior to this, Andrew spent time working in Australia, which has continued to influence his cooking style. He trained at Gleneagles under Allan Hill, where he developed his passion and knowledge, then moved to London, where he gained experience at the respected Mosimann’s Belfry in Belgrave Square and the famous Chez Nico in Park Lane.
